77% Cinsault - Bechthold Vineyard
12% Grenache - Mettler Vineyard
11% Vermentino - Gayla’s Vineyard

From Provence down to Sicily, pink wines are an integral aspect of the Mediterranean lifestyle.  With this wine the Cinsault vines (no, it is not Frappato) were harvested at optimal maturity at the end of Aug, so it is lively, expressive and flavorful.

Initially we blended-in Vermentino for a co-fermentation effect and then a week later, Grenache; prolonging the fermentation and adding complexity.  

Once completed, it was racked and held in a neutral vessel.  In mid Nov it was very lightly fined, followed by another racking and then gently filtered prior to bottling.

Bottled in Dec 2015; 12.9% alcohol, pH 3.21 & TA 6.1 g/l
