2013 Uvaggio Zelo Rosso

89% Dolcetto - Napa, Carneros
11% Barbera - El Dorado, Fairplay

Inspired by the contemporary offerings of Dolcetto from Italy’s Piemonte, we returned to our Napa roots to craft our interpretation.

Harvested extremely ripe, after several days of cold maceration we inoculated with a select yeast strain.  
Post fermentation and pressing, it underwent a malo-lactic conversion in cooperage.  It was racked in the next spring, followed by several others during sixteen months of barrel aging.  The cooperage was comprised of 22% new French oak, along with 78% third use French.

Bottled in March 2015; 14.4% alcohol, pH 3.52 & TA 6.5 g/l  

Bold, dense and intriguing; spicy and toasty oak aromas, mingling with the aromas and flavors of black cherry and damson plum, plus a hint of an almond bitterness; concentrated yet nuanced; with a full, intense finish.
