After harvest in mid-Oct and several days of a cold maceration, the must was inoculated with a fruit enhancing yeast selection. After fermentation it went through malo-lactic conversion.
Early the following year, it was racked and blended, followed by eventual barrel aging, where it aged for nine months in a combination of 4% new Hungarian oak, 18% once used Hungarian oak and 18% twice used Hungarian; while the remainder was aged in relatively neutral oak.
Bottled in June 2014; 14.6% alcohol, pH 3.58 & TA 5.9 g/l
Fruity and engaging; a briary aroma of raspberry, flavors of blackberry and black cherry, hints of spice like anise and cardamom; supple and nuanced, with an elegant, dry finish.
